Frequently Asked Questions

What is Bean to Bar chocolate?

“Bean-to-bar” chocolate describes the chocolate making process, where the chocolate maker begins with cacao beans and turns the raw product into chocolate. Chocolatiers melt pre-made chocolate (couverture) to create chocolate confections. Both terms are used to differentiate between mass-produced chocolate.

What is Cacao?

Chocolate is made from cacao, also known as cocoa. Cacao is one of nature’s superfoods, it is one of the highest sources of magnesium in nature, full of antioxidants, calcium, zinc, copper and selenium. Cacao contains more antioxidants per gram than blueberries, goji berries, red wine, raisins, prunes and even pomegranates.

What is Single-origin chocolate?

Single-origin chocolate is made using cacao beans from one specific region or terrior. Cacao beans from different regions have distinctive flavour profiles and similar to wine, the environment where cacao grows from can determine a chocolate’s taste.

What are cacao nibs?

Cacao nibs are parts of dried cacao beans, which grow on the cacao tree and are the primary ingredient for making fine quality chocolate. The roasted earthy, dark chocolate flavour and crunch factor also make them the perfect additive to smoothies, sauces, oatmeal and other cereals, homemade trail mix, or your favourite ice cream.

How should my chocolate be stored?
